Of all the canned potato recipes I have tried this one from my mother-in-law is the best. After she became widowed back in the late 80’s, she moved from Annapolis, Maryland to Sanibel Island, Florida to start a new life. She loved living there and found a job working for a caterer on the island.

Ingredients needed to make the recipe.

When we would go to visit her, she always prepared the most delicious food with ease. Everything she made for us was what she learned to make using the caterer’s recipes.

One of our favorites recipes that I still make today is Herbed Canned Potatoes. They are beyond delicious and go nicely with a formal meal, simple hamburger or with eggs for brunch.

Canned food never tasted so good. The canned potatoes can be cooked in a cast-iron skillet or an air fryer.

Everglades All-Purpose Seasoning

The secret to their taste is a Florida-made seasoning called Everglades. It adds the most delicious mix of herbs and seasonings that I have never been able to create on my own.

When we run out, I have to buy it online since it is not sold in my local area. When I don’t have it, I substitute Herbamare seasoning that I buy at my local health food store. You can also sprinkle on your favorite seasoning blend.

Gourmet Herbed Canned Potatoes

Canned potatoes right out of your pantry never tasted so good. So delicious you better make a double batch as your family and friends will be reaching for more. You can reheat any leftovers in the microwave for another meal or as a tasty snack.

Equipment

  • frying pan. large skillet or air fryer

Ingredients

  • 1 can whole potatoes or sliced white potatoes
  • 1 heaping teaspoon flour
  • 1 heaping tablespoon bread crumbs
  • 1 heaping tablespoon chopped chives
  • 1 teaspoon Paprika
  • 1 teaspoon Everglades Seasoning or Herbamare Herbed Sea Salt
  • 1 to 2 tablespoon butter
  • 1 plastic bag or container to mix potatoes and seasonings

Instructions

  • Place potatoes and dry ingredients into a plastic bag or container. Close and then shake together to mix well to coat the potatoes.
  • Add butter to frying pan and cook potatoes on medium heat, turning every few minutes until all sides are coated with butter. Cook until a golden brown color and then turn heat to low. Stir a few times while the potatoes simmer for about 10 minutes.
  • Serve immediately.
  • Cooking Option: To make the potatoes in an air fryer.  Coat the potatoes in the dry ingredients and then place them on a plate, then drizzle the melted butter on the potatoes – then place in a 350 degree air fryer for 20 minutes. After about 10 minutes, remove basket and shake potatoes. Cook for 10 more minutes and serve.

Notes

Store leftover potatoes in an airtight container in the fridge for up to 5 days.

  2. Hi Diane. Canned whole potatoes were a go to of my MIL for all holiday dinners involving Beef. Would put in pan with roast and so delicious. So, I’ve been doing that for years. My family loves them. L

    What are your thoughts on time and temperature cooking in cast iron skillet in oven. I use mine all the time and plan on that for next steak night.

      Hi Sarah – Canned potatoes get a bad rap, but as you know they can and are delicious when prepared right. I am not the best person to answer your question about cooking in a cast iron skillet in the oven since I have never cooked them using a skillet/oven method. I don’t own a cast iron skillet to even try to guess. Have you asked the question in Google search? I am sure you will find the answer there.

    I made these tonight and followed the air fryer method. The only thing I changed was the seasoning. I didn’t have Everglade so I used seasoned salt. Let me tell you… they were delicious!!!! Never would of thought to put bread crumbs on potatoes. They were so good. Will be a staple in my house. Especially on busy nights and you don’t have time to peel potatoes.

    I have made these numerous times, could probably eat them every day! I usually cut mine unless they are tiny, use either one large or two small cans and have used lots of substitutions for the Everglades seasoning (herbes de provence, garlic pepper, even a taco seasoning packet!)

  7. I try to keep both sliced and whole canned potatoes in the pantry. I fry the sliced ones to use like hash browns & add the whole ones to many dishes. I’ve never heard of Everglades seasoning and lived on the edge of the Glades half my life. Will look for it. Thanks

      Hi Pamela – Everglades was a staple in my MIL kitchen. She lived in Ft. Myers/Sanibel area and when we visited I would always buy a bottle at Publix to take home with us. I have only seen it sold at stores in Florida.

        I tried the Air Fryer method tonight, following everything to a “T”. After putting the melted butter in the bag, it created a clump of the seasons and butter which did not evenly stick to the potatoes.
        Next time I will try the skillet method to see if this works any better.

          Hi Sharon – Thanks for telling me that the air fryer method didn’t work for you when making the canned potatoes. If you want to use your air fryer, maybe coat the potatoes in the dry ingredients and then place them on a plate, then drizzle the melted butter on the potatoes – then palce in the air fryer. I will update the recipe and mention this.

There are recipes everywhere but finding recipes ‘so good that people would pay for it’ are hard to find ?   10. Among those who never knew about canned potatoes! (As poor newlywed, learned to use and religiously stick to list! No eye wandering allowed…and only have used cheepo pots from a bag… But, what else have I missed?!) Your potatoes look/sound delicious – will try ’em!     Let’s make life easier: canned potatoes would eliminate “bother” of peeling…and need to compost so not to damage garb. disposal. All in for that!

    Related note: on the canned potatoes, spied a circled “P”: is that from my old standby – Piggly Wiggly? Loved that chain yrs ago when ex and I lived in GA & SC! Also Winn Dixie, but it’s long gone from Louisville, KY. See it is only in FL and very southern Alabama and LA.

    Another use for canned potatoes is for German potato salad. So easy and a good side for burgers and anything else grilled.

  13. I used canned sliced potatoes for years for home fries for Sunday morning breakfast back in the 80’s. Canned potatoes are a good staple to keep in the pantry especially during times when you could face food shortages. The key was always browning the butter in the pan before adding the potatoes. I used to add seasoning and paprika so I’m sure our end results are similar.
    It’s knowing how to make a silk purse out of a sow’s ear.

        I always just drained really well otherwise the water content makes them mushy and they won’t brown.

        Hi Rose- I replied to your email, but I also wanted to make sure to answer your question here in the comment section. Just drain. The starch on the potatoes helps the coating stick better.

    3. My father who passed used to also make home fry potatoes using canned but whenever I try to replicate I cannot seem to get it right. The potatoes seem to take forever to cook and brown like his. I miss my dads cooking.

  14. Sounds simple and delicious! I wonder about slicing the potatoes into wedges. That way more of the potato has seasoning and is crusty? I boil small red potatoes and cut them into smaller pieces and fry in butter until browned and crusty. Need to check out the Everglades seasoning. Thanks Diane!

      Hi Sharon – Either had I never bought canned potatoes and never had them as a child growing up. My first were the ones my mother-in-law made. The Everglades Seasoning is hard to find, except in Florida or on Amazon or the Everglades website. They have a few different seasonings, but the original is the best.
